Lebanese Recipes: Falafel
Falafel is one of the most popular Lebanese Recipes, even though many countries in the Middle-East and Africa pretend that the recipe is originally from their country. Still, the Lebanese recipe is prepared differently.
To serve up to 6 persons, prepare the following ingredients:
- Broad beans (one dried cup)
- Chick peas (one dried cup)
- Chopped fresh coriander (1/2 cup)
- Chopped fresh parsley (1/2 cup)
- Fresh crushed garlic (4 cloves)
- Ground Coriander (1 tsp)
- Soda Bicarbonate (1 tsp)
- Cumin (1 tsp)
- Chopped onion (1)
- Mixed Spices – the 7 spices (1/4 tsp)
- Salt & pepper
Preparation:
Soak the chick peas, the beans and soda bicarbonate in water from the night before (or for 24 hours). Drain and wash.
Put all the ingredients in a food processor and blend till a soft dough like mixture is obtained.
Put in the fridge for 1 hour.
Divide and shape the mixture into small balls (prune size).
Flatten each small ball in your hand or use the Falafel spoon.
Deep fry in hot oil.
Serve warm with Chopped Tomatoes, pickles, and parsley and Tarator sauce.
